
I had a pot of double cream which I was given but didn't know what to make with it! I looked through my cookbooks and found this cake in Betty Crockers Picture cookbook


The recipe
Whip 1and 1/2 cups of double cream
Fold in 3 well beaten eggs and 1 tsp of vanilla
Sift together 2 and 1/4 cups of flour, 1 and 1/2 cups of sugar, 2 tsp baking powder and 1/2 tsp salt
Mix together
Pour into two 8 inch baking tins and bake at 180oC for approximately 30 minutes
Leave to cool then decorate as you wish
I froze one layer for another day. I other cake I decorated with a layer of passionfruit curd and some flaked almonds.
It is a nice soft sponge but still holds it shape well, perfect for stacking the cakes together. As a special occasion cake it would be perfect with some chocolate frosting, as suggested in the recipe.
