Smiley face biscuits

It's National Biscuit Day today 29th May, and in celebration of this I made these chocolate smiley face biscuits.





The recipe is based on one from a vintage magazine supplement from Women and Home 1956 titled 'Cakes, Buns and Biscuits'









I used the smiley face cookie cutters from Lakeland which was actually a Christmas present and I hadn't manage to use yet. They are easy to use and have two cutters per cookie shape. There are four shapes in total; round, star, heart and flower. The face shape comes out really well but I did find I had to help remove some of the bits.



The recipe is easy to make and the dough comes together really well. It rolls out but I did have to use flour to stop it sticking. I think I may have overbaked by biscuits a bit, but that just made them slightly more crisp (and better for dunking!)


I used jimjams chocolate orange spread to sandwich my biscuits together and it was the perfect consistency for this. Just don't put it too near the edge of the biscuit otherwise it will squish out when you press them together!


If you don't have these cutters you could easily just cut them into rectangle shapes as the recipe suggests and make the normal style bourbon biscuit. Or use any other shape cookie cutter and sandwich them together, it really is up to you!






The Recipe for Smiley face biscuits


Ingredients


4oz caster sugar

6oz plain flour

4oz butter or margarine

2oz custard powder

2 level tablespoons cocoa powder

1 small egg


Method


  1. Beat butter/margarine until soft then beat in the caster sugar

  2. Sift dry ingredients together

  3. Add in the beaten egg with the dry ingredients

  4. Work together until it forms a stiff dough

  5. Roll out to 1/8th inch thick and cut out biscuit shapes

  6. If making bourbons prick over with a folk

  7. Sprinkle over a little caster sugar

  8. Bake at 170oc for 10-12 minutes

  9. Cool on a wire rack

  10. Sandwich together with your choice of filing

  11. Enjoy!
