
I used to have an allotment which produced a massive amount of rhubarb. I miss having such an amazing amount of rhubarb, so when I found some reduced at my local supermarket, I snapped it up.
With the coronation shortly to take place, the name of these cakes seemed appropriate so I decided to give them a go.
The recipe is from 'The Daily Telegraph Favourite Recipes' but I'm unsure of the date.

Ingredients
Rhubarb
8 oz flour
3 teaspoons baking powder
1/2 teaspoon salt
2-3 oz sugar
1 egg
1/4 pint milk
2 oz melted margarine
Sugar to sweeten the rhubarb
Method
Wipe and cut up the rhubarb
Sieve all dry ingredients into a bowl with the 2-3oz sugar
Stir in beaten egg, milk and melted margarine
Place a small amount into the bottom of a loaf or cupcake tin
Cover with a layer or rhubarb and sprinkle over some sugar
Finish with another layer of mixture on top
Bake in a hot oven for approx 15-20 minutes
Serve with custard

They would be a perfect addition to any picnic, street party or dessert table!
