I love pancakes and waffles so I wanted to try the trend for these banana bites

I used my go to batter recipe from Cooking in War time by Elizabeth Craig


The batter recipe
Ingredients
1 egg
2oz plain flour
2 tsp sugar
Pinch salt
1/4 pint milk
Method
Sift flour and salt
Stir in sugar
Make a well and drop in the egg
Mixture together, adding in the milk as you go
Leave to stand for 1 hour
Cut up the banana into chunky pieces
Coat slices in the batter mixture then fry in a hot pan until golden brown
Serve like pancakes with your chosen toppings etc



I served mine with peanut butter, some flaked almonds and a grating of dark chocolate.
The banana cooks slightly making it soft and sweet which is delicious!
