I love any reason to cook dinner around a theme, so when I saw this meal plan in my Betty Crocker picture cook book I knew I had to recreate it
The meal is based on 3 courses, with the idea that each course could be at a different persons house!
Here is the meal plan:
Starter
I chose to do the melon ball cocktail cup, which is just balls of melon and watermelon, lemon juice and mint. I didn't have a melon baller so I cut my melons in to small chunks. Here is my verson:
I enjoyed this, it was light and refreshing, the perfect first course.
Mains
For the main course I chose a Quorn fillet to replace the fried chicken, as I am vegetarian. I had this with corn on the cob and the most epic potato salad. The salad was probably my favourite part of this meal. The cooked potatoes were mixed with mayonnaise, then placed on a plate and garnished with salad leaves, cucumber, radishes, tomatoes and some boiled eggs.
I would make this again as I enjoyed it very much.
Dessert
Now dessert was going to be cherry pie, but I had already made a red, white and blue trifle so this is what we had. If you would like the recipe, I have a separate post on this. https://www.katebakesvintage.co.uk/post/trifle
It was a delicious meal and perfect for summer. Light, plenty of fruit and vegetables and very colourful. I will definitely be having more melon and watermelon during the summer and that potato salad will be featured again too.
